innumerable, into one of the big scientific dairy farming successes in the East an institution supplying not only the dairy food requirements of Hong Kong and South China, but, thanks to the extensive shipping facilities of the port, distributing its products to almost every part of the globe.
At no point, owing to the irregular "lie of the land." can the eye take in the extent of the Farm. Until æroplanes visit Hong Kong we must content ourselves by saying that the best view of the farm is obtained from the sea. The visitor rounding the south-west corner of Hong Kong by steamer is impressed by the white buildings dotted like mushrooms on the green slopes of the hill. Closer acquaintance reveals the boldness of the conception which thus charms the eye from a distance. The animals have been housed wherever it was possible to level a site, and that which gives the verdant appearance to the farm is not the extensive pastures one would naturally associate with a dairy farm, but patches of guinea grass planted by hand on the steep hillsides, and carefully tended as a necessary variation to the imported diet of the live stock. The farm occupies the best site in spite of all its drawbacks that the Island affords. Its south-westerly exposure enables it to enjoy whatever cool breezes there are during the semi-tropical summer, and sloping seaward is admirably drained and is entirely free from such contaminating influences as are invariably met with in the neighbourhood of populous cities. Stout hearts and unlimited confidence have triumphed over many difficulties. Phoenix-like, the Dairy Farm has risen from the ashes of early misfortunes to stand to-day a magnificent monument to perseverance, and an institution worthy of the great and progressive Colony from which it takes its name and which it serves so well.
